Are you using the Normal template? If so you are going to experience
this forever, welcome to Word Hell.

Two things:

1. Ensure you don't use any styles that are in the Normal template.
These are all protected.

2. Make your own template and use it, not the Normal template. This
will reduce the weirdness.
