I notice that both of the things that seem to be problematical for your users involve using the mouse? Have you tired to instruct them in a non-mouse approach, namely the Save All Attachments command? I admit that it's pretty well hidden in Outlook 2010 (in the Move section of the Home ribbon, you need to select Actions>Other Actions>Save All Attachments), but you can also get to it using only the keyboard via the key sequence Alt, H, M, O, N.
