Although a lot of people wouldn't care for definition, when asked "What's a technical writer do?" the answer that I've found seems to get the most recognition from people is when I say "We write instruction manuals."
No, it's not inclusive of the entire profession, yes it implies print only, so no it's not 100% accurate. But I have found that it will do.
But my favorite description of what we do is just three words: "We explain things."
