I don't know if anybody in AZ offers degrees in it, but
programs in your general area include New Mexico Tech
(Socorro) and New Mexico State University (Las Cruces).
Last time I checked, there were ~50 programs nationwide,
ranging from the certificate through the BA/BS to, in
some cases, the PhD.
