For the Windows side, check out Visio (sp?).
Among other things (map making, org charts), Visio has a wonderful (and
fun) flow-charting tool.
On the Mac side, check out ClarisImpact. Impact is presentation software,
with tools for overheads, org charts, flow charts, and time lines.
