Appendix B - Topic 2
Appendix C - Topic 3


   That's my first instinct. I don't have any official style guidelines for
it so there you go. I would also list them individually in the TOC:

Appendix A - Chewing......30
Appendix B - Microscopy...32
Appendix C - Powder.......32

etc.


   The spelling "appendixes" gives me the willies. I prefer appendices.
