I'm aware of all those caveats.

But this is a user guide for a product I own; I have no reason to redistribute it. The download files include the original user guide and an errata. The errata is so small, I wanted to make the changes to the original file and toss the errata.

The TouchUp Text Tool in Acrobat Pro does the job, just fine.

It's certainly possible; it's just a really bad idea, and for two important reasons. (There are probably others, but these are deal killers imho.)
