Guilty as charged!
As part of my graduate program I had to obtain at least a couple month's on-the-job experience. I got lucky by finding out that the University was upgrading their legacy financial aid system and needed someone to put together manuals, references, instructions, and training materials. They hired me for a semester and kept me for a year (until I graduated).
The only thing I regret about the internship is that I was not working side-by-side with a more experienced technical writer. However, it also meant I didn't need hand-holding. What advanced assistance I needed I often found (and find) here and through STC.
If you're looking to reach out on your own, you may want to try some contract or volunteer work. I did a lot of gratis editing, revising, and consulting for friends and family as well as non-profit groups. These let me learn about new areas and gave me things to put in my portfolio.
Where do you find opportunities--paid and otherwise? STC is a great place to start. There are other professional networking groups, of course. You just have to look around your area--check out the community calendars.
Good luck!
:)

Thanks to everyone for their advice about finding a technical writing
internship. I was just wondering if there is anyone who has actually had a
technical writing internship or apprenticeship and what your experiences were
like.
Thanks,
Emily
