Good Question.
(Sitting firmly on the fence,) SInce the noted examples are short for
"Electronic Mail" or "electronic mail", I would vote for all three!
Seriously, most references that I see refer to E-mail. Probably because it
stands out the best (IMHO) as "different from US Mail", where "e-mail"
doesn't stand out enough and "Email" can be seen as one (confusing) word.
I confess that I haven't seen a style guide on this issue yet.
